Argentinian by birth, Juan Carlos Ferrando has undoubtedly become Basque in his heart since he completed his training as a Chef. By way of his experiences in various restaurants (Casa Masip in Ezcaray, Zortziko in Bilbao, Alameda in Hondarribia, Martin Berasategui in Lasarte, the Broche in Madrid and the Hotel Viura in Villabuena de Alava), he gathered his considerable knowledge of the ingredients and techniques of Basque Country cuisine and now shares all the gastronomic subtleties he has learned.
